Is it possible to change the legs from polished steel to wooden ones?

The legs can be removed and therefore it might be possible for you to replace these with alternative legs. We would not be able to provide these and it would be up to you to ensure that these were a correct fit for the sofa.

Do the legs of the Mendini Armchair unscrew to allow delivery through a narrow door. If so, what would the dimensions be?

I can confirm that the Mendini Armchair is dispatched with the legs concealed within the chair to protect the finished legs during transit. The packaging dimensions you would need to take into consideration are: 98 x 90 x 54cm.
